Fresh broccoli should be firm and tight-budded, with a deep, almost blue-green colour and a clean, slightly grassy scent. It should snap, not bend. It should taste of something. Broccoli is classified as a cruciferous vegetable, a group long studied for its exceptional health properties. It is extraordinarily rich in vitamin C — a single 100g serving provides more than the recommended daily intake — as well as vitamin K, folate, potassium, and fibre. But broccoli’s most celebrated nutritional contribution is sulforaphane, a sulphur compound released when the vegetable is chopped or chewed that has been extensively studied for its anti-cancer, anti-inflammatory, and detoxification-supporting properties. Sulforaphane is most potent in fresh, lightly cooked broccoli — another reason why freshness at point of delivery matters enormously.
